8 slices roast beef , cooked ( sliced about 1/2-inch thick )
2 cups mashed potatoes
1 cup broccoli , cut up and cooked
1 cup diced carrot , cooked
2 tablespoons chopped parsley
2 tablespoons parmesan cheese

Instructions

1.Preheat the oven to 375°F. Grease a baking dish with cooking spray.
2.In a medium skillet, heat the olive oil over medium heat. Add in the onion and garlic and cook until softened, about 5 minutes.
3.Add in the beef gravy and diced tomatoes, and the Italian seasoning. Stir well to combine and bring to a simmer.

5.Place the filling on one end of each slice and roll it up tightly. Place the enchiladas seam-side down in the prepared baking dish.

7.Cover with foil and bake for 25-30 minutes, or until heated through.
