1 tablespoon olive oil
2 red onions , thinly sliced
2 -4 garlic cloves , crushed , to taste ( optional )
2 tablespoons brown sugar
sea salt , to taste
fresh ground black pepper , to taste

Instructions

1.Preheat oven to 200 Celsius.
2.For the caramelised onion, heat olive oil in a pan and add onions and garlic. Cook until soft.

4.Cut bagels in half, spread mayonnaise on one half and place lettuce or spinach on top.
5.Add sliced roast beef, blue cheese, tomatoes sprinkled with salt, pepper and basil leaves, and caramelised onion.
6.Put the top half of the bagel on and place the sandwich on a baking tray. Bake for 5-10 minutes until heated through and the cheese has melted.
