Ingredients

2 large aubergines
2 garlic cloves , quatered
3 tablespoons olive oil
1 shallot , finely chopped
2 tablespoons chopped of fresh mint
2 tablespoons chopped fresh coriander
1 lime , juice of
salt & freshly ground black pepper
Roast Aubergine (Eggplant) and Mint Salad is a healthy and flavourful dish that originates from the Mediterranean region. Aubergines, also known as eggplants, are a staple ingredient in this region and are used in many traditional dishes. This salad is a modern twist that combines roasted aubergines with fresh herbs and lime juice to create a refreshing and tangy flavour. This dish is great as a starter or as a side dish to complement a main meal. It can also be modified to include other herbs, nuts or salad leaves depending on your preference.

Instructions

1.Preheat the oven to 200C/180C Fan/Gas 6.
2.Cut the aubergines into 2cm thick slices and place them on a baking tray.
3.Add the quartered garlic cloves to the tray and drizzle olive oil over the aubergines and garlic.
4.Roast in the oven for 30-35 minutes or until the aubergines are golden brown and tender. Allow to cool.
5.In a bowl, mix together finely chopped shallot, chopped fresh mint, chopped fresh coriander and lime juice.
6.Add the roasted aubergines and garlic to the bowl with the herb mix and gently coat. Season to taste.
7.Serve cold and enjoy!
