Ingredients

6 6 charles ross apples ( British apples ) or 6 worcester pearmain apples ( British apples )
6 ripe conference pears
4 tablespoons olive oil
4 tablespoons soft brown sugar
6 medium egg yolks
100 g caster sugar
100 ml cider
1 squeeze lemon
Roast Apples and Pears With Cider Froth is a delicious dessert that is perfect for cold evenings or special occasions. Instructions

1.Preheat oven to 190°C/gas 5/fan 170°C.
2.Peel and core the apples and pears then cut them in half lengthways and place all the fruit in a roasting tin in a single layer. Drizzle with 3 tablespoons of the olive oil and sprinkle with the brown sugar.
3.Roast the fruit in the oven for 25-30 minutes or until the edges are caramelised.
4.For the cider froth, heat the caster sugar in a heavy-based saucepan over a medium heat until the sugar melts and caramelises.
5.Whisk the egg yolks in a heatproof bowl over a pan of simmering water, then gradually whisk in the melted caramel. Gradually pour in the cider, whisking all the time, and continue to whisk until the mixture is frothy and double in volume.
6.Drizzle the remaining olive oil and a squeeze of lemon juice over the roast fruit then spoon over the cider froth and serve immediately.
