Ingredients

8 cups milk ( you may use low fat milk , if you like , it does not affect the taste . I used 2 % )
2 cups water
1 cup long grain rice ( not instant )
1/2 cup butter
4 eggs
3/4 cup sugar
1 tablespoon vanilla
2 tablespoons cinnamon

Instructions

1.Bring 2 cups of water to a boil in a large pot.
2.Add 1 cup of long grain rice and reduce heat to low. Cook for 20-25 minutes or until rice is tender.
3.Stir in 8 cups of milk and 1/2 cup of butter and bring to a boil over medium heat. Reduce heat to low and simmer for 20-30 minutes or until the mixture has thickened.
4.Remove the pot from heat and whisk in 4 eggs, 3/4 cup sugar and 1 tablespoon of vanilla.
5.Return pot to low heat and stir constantly for 5-10 minutes or until the mixture thickens even more.
6.Remove from heat and let cool for 10 minutes before serving. Top with cinnamon and enjoy!
