2 lbs salmon fillets , cut into 4 portions

hot chili pepper ( optional )

Instructions

1.Season the salmon fillets with the salt, parsley, garlic, red pepper flakes, and chicken bouillon.
2.In a large pot or Dutch oven, heat the peanut oil over medium heat. Add the seasoned salmon fillets and cook for 2 minutes on each side until browned. Remove the salmon from the pot and set aside.
3.In the same pot, add the chopped onions, tomatoes, tomato paste, garlic, and black pepper. Cook for 5-7 minutes or until the vegetables are tender.
4.Add the chicken bouillon, bay leaves, and 1 cup of water. Bring the pot to a simmer, then add the carrots, potatoes, sweet potatoes, eggplant, cabbage, and enough water to nearly cover the vegetables.
5.Cover the pot and cook for 15 minutes or until the vegetables are tender. Add the okra and hot chili pepper (if using) and cook for an additional 5 minutes.
6.Return the salmon fillets to the pot. Cover the pot and cook for 10 minutes or until the salmon is fully cooked.
7.Serve the Riz Gras With Salmon over cooked rice.
