2 large eggs , beaten
1/2 cup matzo meal
1 teaspoon coarse salt or 1 teaspoon kosher salt ( 5 mL )
1/2 teaspoon coarsely grated black pepper
vegetable oil , for frying

Instructions

4.Working in batches, drop spoonfuls of the vegetable mixture into the hot oil, flattening them slightly with the back of a spoon.

7.Repeat with remaining mixture until all latkes are cooked.
