1/2 lb shrimp , peeled , deveined , cooked , well drained , and coarsely chopped ( about 1 1/2 cups )
3 large eggs , beaten with 1/4 cup water for egg wash
fine plain breadcrumbs
olive oil or corn oil ( for frying )

Instructions

1.In a medium saucepan, combine the milk, 4 tablespoons of butter, and 1 teaspoon of salt and bring to a boil.
2.Lower the heat and add the flour to the saucepan. Mix quickly until the dough forms a ball and no longer sticks to the sides of the pan.
3.Remove from heat and knead the dough for a couple of minutes. Let it rest for 5 minutes.
4.In a separate pan, melt 2 tablespoons of butter over medium-high heat. Add the onion and cook until softened.
5.Add the cilantro, hot pepper sauce, salt, white pepper, and nutmeg to the onion mixture.
6.In a small bowl, mix the cornstarch and water together until smooth. Add to the pan and whisk until the sauce thickens.
7.Stir in the chopped shrimp and cook until the shrimp mixture is heated through.
8.Roll the dough out to about 1/4 inch thickness and cut into 3 inch rounds.
9.Spoon a small amount of the shrimp mixture into each round and fold over, pressing the edges to seal.
10.Dip each turnover into the egg wash and then coat with breadcrumbs.
11.Heat oil in a medium saucepan to 350°F. Fry the turnovers, turning occasionally, until golden brown.
12.Drain the turnovers on paper towels and serve warm.
