Ingredients

2 cups chicken stock
1 tablespoon olive oil or butter
1 tablespoon minced garlic
2 skinless , boneless chicken breast halves - cubed
2 teaspoons olive oil or butter
1/2 large onion , minced
1 cup Carnaroli or Arborio rice
1/2 cup white wine
8 ounces asparagus , finely chopped
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
salt and freshly ground black pepper to taste
1/2 cup freshly grated Parmesan cheese
Risotto is a traditional creamy rice dish that originated in Italy. This recipe takes it to the next level by adding chicken and asparagus to the mix, to create a flavorful and filling meal. Instructions

1.In a medium saucepan, bring the chicken stock to a simmer.
2.In a large skillet, heat 1 tablespoon of olive oil or butter over medium heat.
3.Add garlic and cook for 1 minute, stirring until fragrant.
4.Add chicken and cook for 5-7 minutes until golden brown.
5.Transfer cooked chicken to a plate and set aside.
6.Add 2 teaspoons of olive oil or butter to the skillet.
7.Add onion and cook for 5 minutes until softened.
8.Add rice and cook for 2 minutes until it becomes translucent.
9.Add white wine gradually and stir until absorbed.
10.Pour 1/2 cup of hot chicken stock and stir until absorbed.
11.Repeat the process until all of the stock has been added and the rice is tender and creamy.
12.Add asparagus and spices, stir for 2-3 minutes.
13.Add chicken back to the skillet and stir until heated through.
14.Remove from heat, add grated Parmesan cheese and stir to melt.
15.Serve hot.
