Ingredients

1 lb small squid , cleaned and chopped into 1/2-inch pieces
1 1/4 lbs shrimp , shelled and deveined
1/2 cup olive oil
2 tablespoons olive oil
1/2 onion , chopped fine
1 tablespoon garlic , chopped
3 tablespoons parsley , chopped and divided
1/2 cup dry white wine
1 cup plum tomato , peeled and chopped ( canned or fresh )
2 quarts water
2 cups arborio rice
salt
pepper , freshly ground
ground cayenne pepper ( optional )

Instructions

8.Continue to add ladlefuls of hot water to the skillet, one at a time, stirring and waiting for each addition to be absorbed.
9.When the rice is tender and the risotto is creamy but still has structure, add the chopped seafood to the skillet and stir well.
10.Stir in 2 tablespoons of chopped parsley.
11.Season with salt and freshly ground black pepper. If you want a little extra heat, add some cayenne pepper.
12.Serve hot, topped with the remaining tablespoon of chopped parsley.
