Ingredients

1 cup chablis ( or other dry white wine )
1 7/8 ounces dried porcini mushrooms
6 -8 cups chicken broth
1 1/2 cups onions , chopped
1 garlic clove , minced
3 tablespoons olive oil
2 cups arborio rice , uncooked
2 cups shredded smoked chicken ( I prefer the smoked ! ) or 2 cups shredded poached chicken ( I prefer the smoked ! )
8 sun-dried tomatoes , oil-packed , drained and chopped
1/4 teaspoon salt
1/4 teaspoon pepper , freshly ground
freshly grated parmesan cheese
Originally from the Northern regions of Italy, Risotto is now one of the most popular dishes around the world. Despite its gradual preparation, it is not a difficult dish to make, it only requires time and care. There are several varieties of Risotto, but the combination of smoked chicken, sun-dried tomatoes, and porcini mushroom - Risotto Bravo! - is a perfect match. Instructions

1.In a small saucepan, simmer the white wine and porcini mushrooms together until the mushrooms are tender. Remove from heat and save the liquid.
2.In a separate saucepan, simmer the chicken broth and keep it warm.
3.In a Dutch oven or large heavy-bottomed pot, saute the onions and garlic in olive oil until translucent.
4.Stir in the uncooked Arborio rice and cook until lightly toasted.
5.Gradually add the chicken broth, a ladle at a time, stirring frequently until the liquid is absorbed and the rice is no longer chalky.
6.Add the reserved mushroom and wine liquid, smoked chicken, sun-dried tomatoes, salt, and pepper. Cook, stirring frequently, until the risotto is creamy and tender.
7.Serve hot with freshly grated Parmesan cheese.
