10 10 cups chicken broth or 10 cups vegetable broth
10 tablespoons butter
3 cups carnaroli rice
2 lemon peel , of grated
6 tablespoons parmesan cheese , grated
48 shrimp , peeled
olive oil
2 cups white wine
3 tablespoons parsley , minced
lemon zest , in strips ( for garnish )

Instructions

1.In a large pot, warm the chicken or vegetable broth over low heat until it simmers.
2.In another pot, melt 5 tablespoons of butter over medium heat.
3.Add the rice and stir for 3 minutes until it is coated with butter.
4.Add wine and lemon peel, and stir well. Cook until the wine is absorbed.
5.Add one ladle of hot broth at a time, while stirring constantly. Cook until the liquid is absorbed and continue for 18-20 minutes until the rice is tender.
6.In another pan, add the remaining butter and heat over medium heat. Add the shrimp and garlic and sauté until the shrimp is cooked, about 2-3 minutes.
7.Add the shrimp to the risotto, along with the parsley and grated Parmesan cheese. Stir until well combined.
8.Serve hot and garnish with lemon zest and additional parsley leaves.
