1 cup risotto rice , unrinsed ( Arborio or vialone nano are good choices )
1 vanilla bean , split
2 tablespoons rum
2 cups water
1 cup whole milk
1/2 cup heavy cream
1/2 cup granulated sugar
1 teaspoon orange zest , grated
1 teaspoon lemon zest , grated
8 ounces good-quality dark chocolate , chopped

Instructions

3.Add the split vanilla bean, rum, whole milk, heavy cream, sugar, orange zest, and lemon zest, stirring to combine. Simmer on low heat for around 20 minutes until the rice is fully cooked and creamy.
4.Remove the vanilla bean and discard it. Add in the chopped dark chocolate while continuously stirring to melt the chocolate and combine it well with the mixture.
5.Serve hot with a sprinkle of grated orange zest on top.
