1 medium onion , peeled and finely chopped
1 cup arborio rice
1 cup fresh mushrooms , chopped or 1/4 cup dried porcini mushrooms , chopped and soaked to rehydrate
1/4 cup dry white wine
1/4 cup sun-dried tomato , chopped and soaked to rehydrate
2 cups chicken broth or 2 cups vegetable broth
2 2 tablespoons fresh basil ( or to taste ) or 2 tablespoons fresh thyme , finely chopped ( or to taste )
1/4 cup parmesan cheese , grated

Instructions

1.Set the 2-Qt pressure cooker to saute mode and add oil to it. Once hot, add chopped onions and cook until translucent.
2.Add arborio rice and cook for 2-3 minutes until it turns translucent.
3.Add chopped mushrooms and wine and stir well for a minute.
4.Add sun-dried tomatoes, chicken or vegetable broth, and fresh herbs like basil or thyme, salt, and pepper. Mix everything well.
5.Close the pressure cooker lid and cook for 6-7 minutes.
6.Once done, let the pressure release naturally for 5 minutes.
7.Open the lid and add grated parmesan cheese. Mix well and serve hot.
