Ingredients

3/4 cup white rice ( not Minute Rice )
1 teaspoon salt
1 quart milk
1/2 cup sugar
1 teaspoon almond extract
2 cups heavy cream , whipped and sweetened to taste
1/2 cup almonds , chopped
1 whole almond

Instructions

1.In a large saucepan, cook the rice with water and salt until it's tender. Drain the water and move the rice to a new saucepan.
2.In the new pan, add the milk and sugar to the rice and bring to a boil. Reduce heat to a low simmer for about 30 minutes and stir occasionally until the mixture thickens.
3.Remove from heat and add the almond extract and chopped almonds, mixing well.
4.To serve, fold in whipped cream (sweetened to taste) into the rice mixture. Top with a whole almond.
