1/4 cup honey
1 tablespoon vanilla
2 eggs
1/4 teaspoon salt
1/2 cup rice bran
1/4 cup sweet rice flour
1/4 cup teff flour
1/2 cup brown rice flour
1/2 cup roasted defatted soy flour or 1/2 cup almond flour
3/4 teaspoon guar gum
1 teaspoon baking soda
5 cups nature 's path gluten free honey almond granola
1/4 cup nature 's path qi ' a hot cereal
1/4 cup raisins , soaked in hot water and drained

Instructions

1.Preheat oven to 350°F. Line a baking sheet with parchment paper.
2.Cream together the Earth Balance buttery spread, almond butter, Truvia, honey, and vanilla in a large mixing bowl.
3.Add the eggs to the mixture and mix well.
4.In a separate bowl, combine the rice bran, sweet rice flour, teff flour, brown rice flour, roasted defatted soy flour, guar gum, and baking soda.
5.Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6.Fold in the gluten free honey almond granola, qi'a hot cereal, and soaked raisins.
7.Using an ice cream scoop, form the dough into 20 balls.
8.Press the balls down onto the parchment paper to create a cookie shape.
9.Bake for 14-16 minutes or until the edges are golden brown. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
