Ingredients

6 large poblano peppers
cooking oil
3 cups cooked long-grain rice
2/3 cup sour cream
1 1/2 cups shredded smoked gouda cheese or 1 1/2 cups cheddar cheese , divided
1 cup frozen corn kernels , thawed
1/3 cup chopped cilantro leaf , plus additional ( to garnish )
salt and pepper
jalapeno , chopped ( optional )
Rio Bravo Rice-Stuffed Poblanos are a twist on the classic stuffed pepper recipe that originated from the Rio Bravo region in Mexico. These peppers are filled with a mixture of fluffy rice, melted smoked gouda cheese, and corn kernels, making for a tasty and satisfying meal. The peppers are roasted until tender and then topped with more cheese and baked in the oven until golden and bubbly. Instructions

1.Preheat your oven to 375°F.
2.Place the poblanos on a baking sheet and coat them lightly with cooking oil.
3.Roast in the preheated oven for about 15 minutes or until the peppers are soft.
4.In a large bowl, combine the cooked rice, sour cream, 1 cup shredded smoked gouda or cheddar cheese, corn kernels, chopped cilantro, salt, and pepper. Mix until well combined.
5.Cut a small slit in the side of each poblano pepper and remove the seeds and ribs.
6.Stuff the peppers with the rice mixture until full.
7.Place the stuffed peppers on a baking dish and sprinkle the remaining cheese over the top.
8.Bake until the cheese is melted and bubbly, about 15 to 20 minutes.
9.Garnish with additional cilantro leaves and chopped jalapeno, if desired.
