Ingredients

6 beefsteak tomatoes or 6 plum tomatoes

2 cups long-grain white rice
1/2 cup chopped yellow onion
2 cups water
1 teaspoon chopped garlic
2 teaspoons pureed chipotle chiles ( see note last instruction below )
2 teaspoons salt

Instructions

1.In a blender, puree the tomatoes with cilantro until smooth.
2.Heat the oil in a large, deep skillet over medium-high heat until hot.
3.Add the rice and cook, stirring constantly, until it turns white and opaque, about 5 minutes.
4.Add the onion and cook, stirring, for 2 to 3 minutes, or until softened.
5.Add the water, garlic, chipotle puree, salt, and tomato puree and bring to a boil.
6.Reduce heat to low, cover tightly, and cook for 18 to 20 minutes.
7.Remove from the heat and let stand, covered, for 10 minutes. Fluff the rice with a fork and serve hot.
