Ingredients

4 sandwich steaks or 4 roll steaks
2 teaspoons mustard , Dijon-style
1/2 teaspoon salt
1/4 teaspoon pepper
2 pickles , cut into long thin strips .
2 ounces salt pork or 2 bacon , cut into long thin strips
1 large onion , Chopped
1/4 cup vegetable oil
1 1/2 cups beef broth , Hot
4 peppercorns
1/2 bay leaf
1 tablespoon cornstarch

Instructions

1.Preheat oven to 350 degrees F (175 degrees C).
2.Lay each sandwich steak out on a work surface; pound with a meat mallet until thin. Spread 1/2 teaspoon mustard over each piece, season with salt and pepper.
3.Top each with pickle and bacon (or salt pork) strips. Sprinkle chopped onion on top.
4.Roll steaks up tightly around the filling. Tie with kitchen twine to secure.
5.Heat vegetable oil in a large skillet over medium-high heat. Brown beef rolls on all sides, about 10 minutes total.
6.Transfer beef rolls to a baking dish. Add hot beef broth to skillet, scraping up any browned bits. Pour over beef rolls. Add peppercorns and bay leaf.
7.Bake in the preheated oven until beef is tender and rolls are cooked through, about 1 1/2 to 2 hours. Remove twine before serving.
