Ingredients

20 cherry tomatoes
5 teaspoons extra virgin olive oil
salt & fresh ground pepper
8 ounces spicy salami
2 garlic cloves , minced
1/4 cup dry white wine
1/4 cup kalamata olive
1/4 cup extra-fine capers
1/4 cup chopped parsley
8 -10 ounces rigatoni pasta ( we prefer tortellini )

Instructions

1.Preheat the oven to 400 degrees F (200 degrees C)
2.Spread the cherry tomatoes on a baking sheet, drizzle with 2 teaspoons of olive oil, and season with salt and pepper. Roast in the oven for 15 minutes or until the tomatoes begin to blister.
3.In the meantime, slice the salami into thin rounds and set aside. Cook the rigatoni according to the package instructions until al dente.
4.In a large skillet, heat the remaining olive oil over medium heat. Add in the minced garlic and cook until fragrant, about 1 minute.
5.Stir in the sliced salami and cook until it begins to crisp up, about 5-7 minutes.
6.Pour in the dry white wine and allow it to cook until it reduces by half.
7.Stir in the roasted cherry tomatoes, kalamata olives, and capers. Cook until everything is heated through.
8.Add the cooked rigatoni to the skillet and stir well to combine. Toss in the chopped parsley, season with salt and pepper as needed, and serve immediately.
