Ingredients

1 lb rigatoni pasta
6 links Italian sausage ( regular , hot or a mix )
2 tablespoons olive oil
1 onion , chopped
2 garlic cloves , chopped fine
1 large eggplant , cut into 1-inch pieces
2 cups shredded mozzarella cheese
1 teaspoon black pepper
1 teaspoon dried oregano
1 quart marinara sauce
1/2 cup parmesan cheese

Instructions
