Ingredients

8 slices bacon , cut in one inch pieces
1 large red bell pepper , cut into matchsticks
1 cup chopped onion
12 ounces rigatoni pasta
1 1/3 cups grated Fontina cheese
1 1/3 cups crumbled gorgonzola
6 tablespoons butter , cut into pieces , room temperature
8 ounces chopped fresh spinach
3 tablespoons brandy
1/3 cup toasted walnuts , chopped
2 tablespoons chopped fresh chives or 2 tablespoons green onion tops
Rigatoni pasta with Bacon, Spinach and Two Cheeses is a delicious and easy dish that can be prepared in just a few minutes. Instructions

1.Cook bacon in large skillet until crisp. Using slotted spoon, transfer bacon to paper towels to drain. Pour off all but 2 tablespoons drippings from skillet.
2.Add bell pepper and onion to drippings in skillet. Sauté over medium-high heat until tender and beginning to brown, about 12 minutes.
3.Cook rigatoni in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain.
4.Meanwhile, heat large pot over medium heat. Add Fontina, Gorgonzola, and butter; stir until melted and smooth. Add bacon, bell pepper mixture, rigatoni, spinach, and brandy to pot; toss to coat. Season with salt and pepper. Sprinkle walnuts and chives over and serve immediately.
