1 eggplants
3 garlic cloves , sliced
3 tablespoons olive oil
1 can whole fire-roasted tomatoes
1 1/2 teaspoons dried oregano
1 1/2 teaspoons salt
1/4 teaspoon red pepper flakes
1 lb mini rigatoni pasta
1 cup shredded smoked mozzarella cheese

Instructions

1.Preheat the oven to 400°F.
2.Cut the eggplant into 1-inch cubes and toss with 2 tablespoons of olive oil. Spread on a baking sheet and roast for about 25 minutes, or until the eggplant is tender and lightly browned.
3.Heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute. Add the tomatoes, oregano, salt and red pepper flakes and simmer for 10 minutes.
4.Meanwhile, bring a large pot of salted water to a boil. Cook the rigatoni according to package directions, until al dente. Drain and add to the skillet with the tomato sauce.
5.Stir in the roasted eggplant and half of the shredded mozzarella cheese. Transfer the mixture to a large baking dish and sprinkle the remaining cheese on top.
6.Cover the dish with foil and bake for 15 minutes. Remove the foil and bake for another 10 minutes, or until the cheese is melted and bubbly.
