Rieslingspaschtéit is a traditional Alsatian dish that combines hearty meat with rich pastry crust and wine. The meat is cooked with onions, carrots, and herbs, then mixed with a pork trotter and pig ears to create a rich filling. Instructions

1.Mix flour with salt in a bowl and form a well in the center. Crack in 2 eggs and add a little bit of water.
2.Add the butter and knead until the dough is smooth. Divide the dough into three pieces, wrap them in plastic wrap, and chill in the fridge for 30 minutes.
3.In a pot, cover the pork trotter and ear with water and bring to a boil. Reduce heat and let the meat simmer for 2 hours. Remove the meat from the broth and reserve the broth.
4.Heat 2 tbsp oil in a large frying pan over medium-high heat. Add shallots, onions, and carrots and cook for 5-7 minutes. Add pork, beef, veal, and cook until browned. Add parsley, marjoram, cognac, pepper, salt, and riesling wine. Cover and simmer for 1 hour.
5.Preheat the oven to 180°C. Roll out one dough piece and place it into a greased deep dish pie pan. Cut the second dough piece into strips and line the edge of the pie dish. Pour in the meat mixture.
6.Roll out the last piece of dough and cut it into strips. Cover the pie with the strips and brush with egg yolk. Bake for 1 hour.
