Instructions

1.Preheat the oven to 375°F. Grease a 9-inch cake pan with 1 tbsp unsalted butter and coat with 1/4 cup breadcrumbs. Shake out the excess breadcrumbs and set aside.
2.In a mixing bowl, stir together the ricotta cheese, 1/2 cup freshly grated parmigiano-reggiano cheese, 3 egg yolks, 1/4 cup minced fresh parsley, 2 tsp minced fresh sage, and 1 tsp minced fresh rosemary. Add salt and fresh ground black pepper to taste.
3.In a separate mixing bowl, whip the egg whites until they form stiff peaks. Gently fold the egg whites into the ricotta mixture.
4.Pour the mixture into the prepared cake pan and bake for 45-50 minutes, or until the top is golden brown. Let cool to room temperature before slicing and serving.
