1/2 cup freshly grated parmigiano , plus additional for serving

2/3 cup all-purpose flour , plus additional for dredging
1/2 cup butter
12 fresh sage leaves

Instructions

4.Divide the dough into 4 equal portions and, using your hands, roll each portion into a 20 inch long rope.
5.Cut each rope into 1 inch pieces and set aside on a floured surface.
6.Bring a large pot of salted water to a boil.
7.In a large skillet over medium-high heat, melt the butter until it is frothy.
8.Add the sage leaves and cook, stirring frequently, until the leaves are crispy and the butter is browned.
9.Add the leeks to the skillet and cook, stirring occasionally, until the leeks are tender and lightly browned.
10.Add the gnocchi to the boiling water and cook until they float to the surface, about 3-4 minutes.
11.Using a slotted spoon, transfer the gnocchi to the skillet with the leeks and toss gently to coat.
12.Divide the gnocchi and leek mixture evenly among four plates and sprinkle each plate with additional parmigiano before serving.
