Instructions

.Preheat the oven to 350°F.
.In a large bowl, toss the beef stew meat with flour until well coated.
.Heat 3 tablespoons of sunflower oil in a large ovenproof casserole dish over high heat. Add the beef and cook until well browned on all sides. Remove the beef and set aside.
.Add the butter to the casserole dish along with the mushrooms and onions. Cook over low heat until the vegetables are softened but not browned. Add the sugar and stir until dissolved.
.Increase the heat to high and add the Guinness, beef broth, thyme, bay leaves, and Worcestershire sauce. Bring to a boil, then reduce the heat and simmer for 5 minutes.
.Return the beef to the dish and stir to combine. Cover the dish and cook in the oven for 2 hours, or until the beef is tender.
.Meanwhile, open the oysters and save the juices.
.Heat the remaining sunflower oil in a frying pan over high heat. Add the oysters and cook for 30 seconds on each side.
.Cut the puff pastry into a circle slightly larger than the casserole dish. Brush a little beaten egg around the rim of the dish and place the pastry on top, pressing it down to seal. Brush the pastry with beaten egg and make a small hole in the center to allow steam to escape.
.Bake for 30 minutes, or until the pastry is golden brown and crisp. Scatter the oysters over the top and pour over any reserved juices.
