7 cups fat free chicken broth
3 tablespoons fat free chicken broth , divided

1 pinch ground cardamom
1/2 lb fresh white mushroom , sliced
1/2 cup carrot , diced

Rich Viennese Potato Soup is a classic Austrian dish, perfect for a chilly day. This thick and creamy soup is made with simple ingredients such as potatoes, chicken broth, and buttermilk. Instructions

1.Heat 2 tablespoons of oil in a large soup pot over medium-high heat. Add onions and sauté for 5 minutes.
2.Add leeks and dried marjoram to the pot and stir for another 5 minutes.
3.Pour 7 cups of chicken broth into the pot and add cubed potatoes and diced carrots. Bring the mixture to a boil, then reduce heat and let it simmer for 30 minutes.
4.In a non-stick skillet, heat the remaining oil over medium heat, add mushrooms and sauté for 10 minutes.
5.Add sautéed mushrooms to the soup and let it simmer for another 10 minutes. Once the soup is ready, turn off the heat and use an immersion blender to blend the soup until smooth.
6.Add low-fat buttermilk, black pepper, and cardamom. Stir until combined and heated through. Serve hot and enjoy.
