Ingredients

2 -3 zucchini , sliced
1 large eggplant , peeled and cut into chunks
1 red bell pepper , peeled and cut into chunks
1 green bell pepper , peeled and cut into chunks
1 yellow bell pepper , peeled and cut into chunk
1 large onion , chopped
2 shallots , chopped
2 large garlic cloves , chopped fine
1 can diced tomatoes with juice
2 tablespoons tomato paste
1 cup chicken broth or 1 cup vegetable broth
1 teaspoon sea salt or 1 teaspoon kosher salt
1 teaspoon black pepper
1 teaspoon italian seasoning
2 tablespoons balsamic vinegar

Instructions

1.In a large pot, heat up some oil over medium-high heat.
2.Add the onion, shallots, and garlic and sauté until everything is tender and translucent.
3.Add in the zucchini, eggplant, and bell peppers to the pot and stir to combine.
4.After a few minutes, add in the diced tomatoes with juice, tomato paste, chicken or vegetable broth, salt, pepper, Italian seasoning, and balsamic vinegar.
5.Bring everything to a boil and then reduce heat to low and allow to simmer until all the vegetables are cooked and tender, about 30-40 minutes.
