Ingredients

2 cups djon-djons mushrooms or 2 cups dried mushrooms
2 tablespoons vegetable oil or 2 tablespoons olive oil
3 garlic cloves , crushed & minced
1 small onion , chopped
2 cups long-grain rice , rinsed with cold water
2 teaspoons salt
4 cloves
12 12 ounces frozen lima beans , & or 12 ounces green peas
1 -2 sprig thyme
1 green scotch bonnet pepper
Rice With Black Mushrooms - Diri Ak Djon-Djon is a traditional Haitian dish that is often served as a main course for lunch or dinner. The dish gets its name from the black mushrooms, which are also known as djon-djon mushrooms. These mushrooms are native to Haiti and are used in a variety of traditional dishes. The mushrooms have a woody, earthy flavor that pairs well with the rice and vegetables in this dish. This hearty and flavorful dish is perfect for a chilly day or any time you're in the mood for a warm and filling meal.

Instructions

1.Soak the dried mushrooms in 2 cups of hot water for 30 minutes. Drain and reserve the liquid.
2.In a large pot, heat the oil over medium heat. Add the garlic and onion and sauté for 2-3 minutes.
3.Add the rice, salt, cloves, lima beans or green peas, thyme, and scotch bonnet pepper. Stir well.
4.Add the djon-djon mushrooms and 4 cups of water – 2 cups of mushroom liquid and 2 cups of fresh water. Stir well.
5.Bring the pot to a boil, then reduce heat to low. Cover the pot and simmer for approximately 20 minutes, or until the rice is tender. Fluff the rice with a fork before serving.
