Ingredients

4 tablespoons dry breadcrumbs , approximately
1/2 lb lean ground beef
1 1/3 cups soft breadcrumbs
2 1/2 tablespoons parmesan cheese , grated
2 tablespoons parsley , finely chopped
3 eggs
4 tablespoons olive oil , divided
1 3/4 cups spaghetti sauce , divided ( marinara or with meat )
1 -2 ounce bacon , chopped
2 cups shelled peas , fresh or thawed frozen
1/2 lb Italian sausage , skinned and crumbled
2 chicken livers , chopped
2 1/2 tablespoons dry white wine or 2 1/2 tablespoons dry white vermouth
6 cups beef stock
2 1/2 cups short-grain rice , such as Arborio
3/4 cup parmesan cheese , grated
1/2 lb mozzarella cheese , sliced or grated
1/4 lb ham or 1/4 lb prosciutto , thinly sliced
1 ounce dried porcini mushrooms , soaked for 30 minutes in warm water , washed , drained and chopped
salt and pepper , to taste
2 teaspoons butter , slivered
Rice Timbale is an Italian dish that is similar to baked arancini. It is made using a mix of meats, rice and vegetables baked into a cake-like consistency with cheese. The dish is perfect for satisfying a big appetite on a cold day or to impress guests with a savory dish that is full of flavors. It is a little complicated to make, but the end result is worth it. It’s great to have as a dinner dish that everyone can enjoy together with bread and a salad. It comes out nicely when served hot and can be consumed for leftovers as well.

Instructions

1.Preheat oven to 360°F (180°C).
2.Grease a 6-cup mold with butter, sprinkle with the dry breadcrumbs to coat, and tap out the excess.
3.Mix ground beef, soft breadcrumbs, 2 1/2 tablespoons grated Parmesan cheese, parsley, eggs, salt and pepper to taste in a large bowl.
4.Heat 2 tablespoons of the olive oil in a large frying pan over high heat and, when hot, add the meat mixture and cook, stirring until lightly browned, then remove it from the pan and set it aside.
5.Add 1 cup of the spaghetti sauce, the chopped bacon and the peas to the pan and cook until the sauce is reduced by 2/3 and thick.
6.Return the meat to the pan, and add the sausage, chicken liver and wine, stirring to combine and cooking until the meat is richly flavoured.
7.Bring the beef stock to a simmer in a large pot.
8.Add the remaining 2 tablespoons of olive oil, the rice and the chopped mushroom to the pot and stir to soak.
9.Add the beef and bring to a boil.
10.Reduce the heat to the lowest simmer and cook, stirring occasionally, until the stock is completely absorbed and the rice is done, about 20 minutes.
11.Remove from heat and stir in the remaining 3/4 cup of grated Parmesan cheese.
12.Cover the bottom of the mold with slices of mozzarella cheese, then line the sides with the ham.
13.Scoop the rice mixture into the mold, firming it in with a spoon.
14.Cover with the remaining mozzarella cheese and the remaining 3/4 cup of spaghetti sauce.
15.Dot the top of the timbale with butter slivers and cover with aluminum foil.
16.Bake the rice timbale in the oven for 40 minutes.
17.Remove the foil and bake until the cheese is melted and slightly browned, about 5 minutes more.
18.Let the timbale cool for 5 minutes before inverting it onto a plate.
