Ingredients

150 g mixed long grain and wild rice blend
4 garlic cloves , crushed
100 g button mushrooms
6 spring onions
100 g ham , shaved
3 tablespoons olive oil
salt , to taste
fresh ground black pepper , to taste
1 teaspoon dried oregano
100 g feta cheese
8 grape leaves
Rice-Stuffed Vine Leaves are a Mediterranean classic that have gained popularity worldwide. This recipe is a vegetarian version of the traditional recipe, featuring a blend of long grain and wild rice mix, mushrooms, onions, garlic, and feta cheese, wrapped in grape leaves to create a melt-in-the-mouth appetizer. This dish has a unique flavor that incorporates the tang of feta cheese, the earthy flavor of the rice, and the refreshing taste of the leaves. The dish is popular in Greece, Turkey, Lebanon, and other Eastern Mediterranean countries as an all-time favorite appetizer or a light meal.

Instructions

1.Rinse the rice and soak for 30 minutes. Drain and rinse again.
2.In a saucepan, boil 1 litre of water with 1 teaspoon salt and the rice. Cover and let it simmer for 15 minutes until cooked.
3.In the meantime, finely chop the garlic, mushrooms, and onions.
4.In a frying pan, heat the olive oil, add the garlic, mushrooms, and onions, and cook until soft.
5.Add the ham and oregano, and cook for another 2 minutes.
6.In a bowl, crumble the feta cheese, add the cooked rice and the mushroom mixture, and mix together.
7.Rinse the grape leaves in cold water and dry on paper towels.
8.Place a grape leaf vein side up on a cutting board, add a teaspoon of the rice mixture at the bottom of the leaf.
9.Fold the bottom part of the leaf over the filling, then fold in the sides and roll up tightly.
10.Repeat the steps with the remaining grape leaves and rice mixture.
11.Put a few unrolled grape leaves at the bottom of a saucepan, and arrange the stuffed leaves neatly on top.
12.Add enough water to cover the stuffed leaves, cover and let it simmer for 30 minutes on low heat.
13.Let it cool down for 10 minutes before serving.
