Ingredients

1/2 cup white rice ( uncooked , but rinsed )
1 1/4 cups milk
1 1/4 cups light cream
2 tablespoons butter
3/4 cup raisins
3 tablespoons fine sugar
1 pinch salt
2 eggs ( lightly beaten )
3/4 cup almonds ( blanched & ground )
3/4 cup granulated sugar
2/3 cup dry white wine
1 cup heavy cream

Instructions

1.Rinse the white rice in cold water and drain. Place the rice in a large saucepan.
2.Add the milk, light cream, butter, raisins, fine sugar, and salt to the saucepan and stir the mixture well.
3.Bring the mixture to a boil over medium heat, then reduce the heat and let it simmer until the rice is tender and the mixture is thickened to a pudding-like consistency.
4.Remove the rice pudding from heat and let it cool slightly. Add the lightly beaten eggs and ground almonds to the pudding, stirring continuously.
5.Preheat your oven to 375°F.
6.Pour the rice pudding mixture in a deep 9-inch dish.
7.In a separate bowl, mix the granulated sugar and dry white wine and pour the mixture over the rice pudding.
8.Bake for 20-25 minutes or until the pudding is golden brown.
9.Let the pudding cool for at least 10 minutes before serving. Top it with whipped cream or nutmeg.
