1/4 cup white rice
2 - 2 1/2 cups water ( depending on how soupy you 'd like it )
1/4 teaspoon salt
2 eggs
soy sauce ( optional )
toasted sesame oil ( optional )

Instructions

1.Rinse 1/4 cup white rice with cold water and drain.
2.Pour the rinsed rice into a pot and add 2 cups of water and 1/4 teaspoon of salt.
3.Bring the water to a boil, then reduce heat to low and simmer the rice for around 25-30 minutes or until the rice is cooked and the porridge has thickened to your desired consistency.
4.While the porridge is still cooking, crack 2 eggs into a bowl and beat them with a fork.
5.Once the porridge has thickened, pour the beaten eggs into the pot in a slow, circular motion. Stir gently to distribute the eggs throughout the porridge. Cook for an additional 1-2 minutes or until the eggs are fully cooked.
6.Serve hot with a drizzle of soy sauce and a sprinkle of toasted sesame oil, if desired.
