Ingredients

1 cup uncooked white rice , rinsed twice
1 teaspoon salt
1 teaspoon vegetable oil
3 cups cold water
3 cups chicken broth
1 inch piece ginger
1 cup shredded chicken or 1 cup lean pork , sliced thinly
2 century eggs , peeled and cut into cubes ( I like using 3 eggs )
1/4 teaspoon white pepper
1/2 cup chopped green onion , extra for garnish
1/2 teaspoon sesame oil
dark soy sauce ( to taste )
Rice porridge, also known as congee, is a staple comfort food in many Asian households. It can be found in different variations across different countries, but the basic recipe involves boiling rice in water or broth until it breaks down and forms a porridge-like consistency. Century egg, also known as preserved egg or thousand-year egg, is a type of Chinese delicacy where duck or chicken eggs are preserved in a mixture of clay, ash, salt, quicklime, and rice straw for several weeks to several months. The end result is a black or green egg, with a creamy and slightly tangy taste. Combining rice porridge with century egg and protein creates a nourishing and flavorful dish that is both satisfying and comforting.

Instructions

1.Rinse white rice twice, add vegetable oil, and fry over medium heat until the rice turns slightly translucent.
2.Combine the fried rice in a pot with cold water, chicken broth, and ginger.
3.Cook on high heat to bring to a boil, then reduce heat to simmer and let cook for 30 minutes, stirring occasionally.
4.After 30 minutes, add shredded chicken or thinly sliced lean pork, cubed century eggs, white pepper, chopped green onion, and sesame oil.
5.Stir and cook for another 5-10 minutes, or until the meat and eggs are fully cooked.
6.Season with additional salt and/or soy sauce to taste, and top with extra chopped green onion as garnish.
