3/4 cup short-grain rice
2 2/3 cups all-purpose flour

1 teaspoon baking powder
3/4 cup unsalted butter
1/2 cup granulated sugar
4 large eggs , beaten
4 tablespoons whole milk

Instructions

1.Rinse rice in cold water. Place in a pan with 1 1/2 cups cold salted water. Cover and bring to a boil. Reduce heat to low and simmer for 20 minutes.

3.Sift the flour, nutmeg and baking powder into a bowl.
4.Beat the butter until soft, add the sugar gradually and continue to beat until the mixture becomes light and fluffy.
5.Beat in the eggs a little at a time, then fold in half the flour mixture.
6.Fold in the cooked rice and milk, then gently fold in the remaining flour mixture.
7.Spoon the mixture into the prepared pan, smooth the surface with a spatula and bake in the preheated oven for 40 minutes.
8.Turn out onto a wire rack to cool.
