Ingredients

1 -2 tablespoon breadcrumbs , finely crushed and unflavored
4 1/2 cups milk
1 1/2 cups sugar
1 lemon , zest of , grated
3/4 cup arborio rice or 3/4 cup other short-grain rice
5 eggs
1/2 cup blanched almond , finely chopped
1/2 cup candied citron peel , finely chopped
1/4 cup rum
2 -3 tablespoons rum

Rice cake (Torta Di Riso) is an Italian classic, which is known for its sweet and creamy texture. The dessert is originally from the Lombardy region in Northern Italy, and it's typically enjoyed during the holidays or family gatherings. The main ingredients are short-grain rice, sugar, and milk. Instructions

1.Preheat the oven to 350°F (180°C).
2.Grease a 9-inch (23 cm) springform pan with butter and sprinkle breadcrumbs over it to coat the inner surface evenly.
3.In a saucepan, heat the milk, sugar, and lemon zest on medium heat until the sugar dissolves. Add rice and simmer for around 30 minutes (make sure to stir occasionally) until the rice is cooked and the mixture has thickened.
4.Remove the saucepan from the heat and add 1/4 cup (60 ml) of rum. Add beaten eggs, chopped almonds, and citron peel to the mixture, ensuring that everything is mixed well.
5.Pour the mixture into the prepared pan and tap it lightly to make the surface level. Sprinkle the top with 2-3 tbsp (30-45 ml) of rum.
6.Bake for about 50-60 minutes until the top turns golden brown and an inserted toothpick comes out clean. Once done, take the pan out from the oven and let it cool down to room temperature.
7.Once the cake is at room temperature, remove it from the pan, and put it in the fridge until it's cold.
8.Serve cold, topped with whipped cream.
