1 teaspoon rose water
500 ml double cream
1 vanilla pod
toasted slivered almonds , and crystallised rose petals to serve

Instructions

1.Preheat the oven to 120C or 100C fan.
2.In a clean bowl, whisk the egg whites and salt to firm peaks.
3.Gradually add the golden caster sugar and continue to whisk for another 2-3 minutes, creating a smooth and glossy meringue mixture.
4.Spread the mixture onto a baking tray and bake for 1 hour or until the meringue is crisp.
5.In a separate saucepan, combine the boiling water and golden caster sugar over low heat, stirring until the sugar has completely dissolved.
6.Add in the chopped rhubarb and rose water, cooking gently for 15 minutes or until the rhubarb has softened and the syrup has thickened.
7.In another bowl, whip the double cream and vanilla pod until thickened but still with a soft consistency.
8.Layer the meringue, rhubarb compote, and whipped cream in a serving dish.
9.Garnish with a sprinkle of toasted slivered almonds and crystallised rose petals.
10.Serve immediately, savoring each delicious bite.
