Ingredients

1 1/2 cups self-rising flour
1/2 cup whole wheat flour

300 g rhubarb , finely chopped
1/4 cup finely chopped glace ginger
1/2 cup grapeseed oil
1/2 cup apple juice concentrate or 1/2 cup honey
3/4 cup low-fat milk or 3/4 cup low-fat soymilk
3 egg whites or 2 whole eggs
Rhubarb & Ginger Muffins are a tasty and healthy twist on the traditional muffin recipe. Instructions

1.Preheat oven to 180C/350F and line a muffin tin with paper cases.
2.In a large bowl, mix self-rising flour, whole wheat flour, and ground ginger.
3.Add the chopped rhubarb and glace ginger.
4.In another bowl, mix grapeseed oil, apple juice concentrate (or honey), low-fat milk (or soymilk), and egg whites (or whole eggs).
5.Pour the wet mixture over the dry mixture and mix until combined.
6.Fill the muffin cases almost up to the top with the mixture and bake for 20-25 minutes or until a skewer comes out clean.
