15 g butter
3 stalks rhubarb , finely chopped
300 g self-raising flour
1 pinch bicarbonate of soda
1 teaspoon ground cinnamon
60 g ground almonds
2 1/2 tablespoons finely chopped crystallized ginger
75 g caster sugar ( superfine )
250 ml milk ( approximately )
2 1/2 tablespoons caster sugar ( extra )

Instructions

1.Preheat the oven to 200°C (400°F).
2.Melt the butter in a frying pan over medium heat and cook the rhubarb for 5 minutes, until softened. Set aside to cool.
3.Sift the flour, bicarbonate of soda, and cinnamon into a bowl.
4.Stir in the ground almonds, ginger, and caster sugar.
5.Add the milk and cooled rhubarb mixture to the bowl and mix until a soft dough forms.
6.Shape the dough into a round and place it on a baking sheet lined with baking paper.
7.Sprinkle the extra caster sugar over the top of the dough.
8.Bake the damper for 30-35 minutes, until golden and cooked through.
9.Allow the damper to cool before slicing and serving.
