2 tablespoons grated lemon rind
3 quarts water
1/3 cup lemon juice

Instructions

1.Wash the rhubarb stalks under running water and cut them into 1-inch pieces.
2.In a large pot, add rhubarb pieces, lemon zest and three quarts of water.
3.Bring the water to boil and lower the heat to low and let it simmer for 30 minutes until rhubarb breaks down and turns mushy.
4.Strain the mixture through a cheesecloth while it's still hot and let it sit for 5-10 minutes.
5.Collect the liquid and discard the solid. Add sugar to taste and stir continuously until fully dissolved.
6.Add lemon juice and stir again.
7.Let it cool and transfer to a sterilized bottle to store in the refrigerator.
8.Serve by adding 1 part cordial to 4-5 parts water or sparkling water and ice as needed.
