Ingredients

1/2 cup vinegar

1 1/2 lbs beef shoulder
1 cup buttermilk
1/2 cup onion , chopped

1/4 cup flour
1/4 cup butter
2 tablespoons gravy flavoring ( Kitchen Bouquet )
1/8 teaspoon salt
1/8 teaspoon white pepper
brown sugar , to taste ( until sweet and sour )
2 tablespoons raisins

Instructions

1.Mix the vinegar, water, bay leaves, cloves, celery, carrots, onion, salt and pepper.
2.Place the beef shoulder in the mixture and marinate for 2-3 days.
3.Remove beef and pat dry; set aside. Strain the marinade mixture and discard the vegetables but keep the liquid.
4.In a large Dutch Oven, saute the chopped onions in olive oil until caramelized.
5.Add the beef shoulder to the pot and brown on all sides.
6.Add the red wine and flour; stir until smooth.
7.Slowly add the reserved marinade and Kitchen Bouquet, stirring constantly to incorporate.
8.Add the butter, salt, white pepper, raisins and brown sugar.
9.Cover the pot and cook on low heat for 4 hours or until the beef is tender. Serve hot over noodles or mashed potatoes.
