Ingredients

500 g rhubarb
100 g margarine , soft
3 eggs
1 pinch salt
200 g sugar
2 teaspoons vanilla sugar or 1 1/2 teaspoons vanilla essence
200 g flour
2 teaspoons baking powder
150 g semisweet chocolate
150 ml single cream

Instructions

1.Preheat the oven to 180°C (160°C fan).
2.Clean and trim the rhubarb. Chop them into small pieces and set onto a plate.
3.In a bowl, mix the margarine with sugar until fluffy. Add eggs and vanilla essence, keep mixing until well combined.
4.Sift in flour and baking powder, fold in gently with a spatula.
5.Spread the mixture onto a greased cake pan, sprinkle with rhubarb pieces evenly over the top.
6.Bake in the pre-heated oven for approximately 35 minutes until the cake is golden brown, and cooked through.
7.In the meantime, melt the chocolate by placing it in a heat-proof bowl over a pan of gently simmering water and a add single cream to form a smooth sauce.
8.Once the cake is done, remove from the oven. Let it cool for 5 minutes before removing it from the pan onto a flat cake board. Pour the chocolate sauce on top of the cake and spread evenly.
