Revani is a popular Greek cake made with semolina, a coarse flour made from durum wheat. It is a variation of basbousa, a traditional Middle Eastern dessert. Revani is usually made with semolina, eggs, sugar, and butter, and flavored with orange zest and juice. The cake is soaked in a sugary syrup after baking, which makes it extra moist and flavorful. It is a perfect dessert to serve during special events or holidays when people gather to celebrate.

Instructions

.Begin by preheating your oven to 350°F and lightly greasing a 9x13 inch baking pan
.In a small bowl, mix together the flour, baking powder, and salt
.In a separate bowl, beat the egg yolks with the sugar until the mixture becomes thick and pale. Then add in the melted butter, orange zest, and vanilla extract
.In another bowl, stir together the orange juice and semolina, then add it to the bowl with the egg yolk mixture and mix until just combined
.In a clean bowl, use a mixer to beat the egg whites until stiff peaks form. Then gently fold the egg whites into the semolina batter, being careful not to overmix
.Pour the Batter into the prepared baking pan and sprinkle the slivered almonds on top
.Bake for about 45 – 55 minutes, or until golden.
.Meanwhile, prepare the syrup by boiling the sugar, water, and cinnamon stick (if using) for about 5 minutes. Then take it off the heat and stir in the brandy
