8 slices rye bread or 8 slices pumpernickel bread
1/2 cup thousand island dressing
12 ounces sliced corned beef
2 cups sauerkraut
8 slices swiss cheese
1/4 cup soft butter

Instructions

1.Heat up a panini press or non-stick skillet on medium heat.
2.Butter one side of each bread slice with the softened butter.
3.Spread Thousand Island dressing on the other side of the bread slices.
4.On four bread slices, place a slice of Swiss cheese, followed by 2-3 oz of corned beef, and then 1/2 cup of sauerkraut.
5.Top each of the four stacks with another slice of Swiss cheese, followed by another slice of bread (with the Thousand Island spread side facing down).
6.Once your panini press or skillet is hot, add the sandwiches and cook until they are golden brown and the cheese is melted, approximately 5-8 minutes depending on the heat of your cooking surface.
7.Once cooked, let the sandwiches cool off for a few minutes and then slice diagonally.
