Ingredients

1 lb mixed fish fillet , cut into 1 inch pieces ( any white fleshed fish )
1/2 lb seafood ( clams , mussels or shrimp )
2 tablespoons Pernod
2 tablespoons olive oil
2 garlic cloves , minced
2 small onions , peeled and sliced
1 fennel bulb , washed and sliced
1 orange , zest of
1 can tomatoes
6 cups fish stock
salt & freshly ground black pepper
1/2 cup fresh parsley , chopped
4 thick slices peasant bread , lightly toasted
2 red peppers , roasted and peeled
2 garlic cloves , peeled
1 teaspoon lemon juice
1/4 teaspoon paprika
salt & freshly ground black pepper

Instructions

1.Generously season the fish fillet and shrimp with salt & freshly ground black pepper.
2.Heat olive oil in a large saucepan and sauté garlic and onions until onions become tender and translucent.
3.Add the sliced fennel bulb, orange zest, and can of tomatoes and stir for few minutes.
4.Pour fish stock and Pernod into the pan and bring to a boil.
5.Reduce the heat and allow to simmer for 10 minutes.
6.Add seafood and simmer for a further 5 minutes, or until seafood is cooked to your liking.
7.Put the roasted red peppers, peeled garlic cloves, lemon juice, paprika, and salt & black pepper in a blender and blend until it reaches a smooth texture.
8.Serve the bouillabaisse soup with the toasted peasant bread, chopped parsley, and red pepper sauce.
