Ingredients

1 1/2 cups basmati rice
1/4 cup orange peel , slivered
5 dates
1/4 cup raisins
1 onion , diced finely
4 ounces noodles , reshteh
1 teaspoon cinnamon
1 teaspoon saffron
1/8 teaspoon turmeric
1/4 cup water
1 teaspoon spices , advieh ( can be found at Middle Eastern Markets , but you can use vegetable or chicken bouillon )
1/4 cup pistachios and almonds , slivered and toasted
3 teaspoons butter
2 tablespoons canola oil
Reshteh Polo, also known as Persian Rice with Noodles, is a popular Iranian dish traditionally served at special occasions such as weddings and celebrations. The dish is a comforting and hearty rice and noodle pilaf, usually loaded with fragrant spices and dried fruits. Reshteh Polo gets its name from the Persian word, 'Reshteh' meaning noodles, and 'Polo' meaning steamed rice. Instructions

1.Rinse the rice with cold water until the water runs clear. Soak the rice in salted water for 2 hours.
2.In a large pot, heat canola oil and add the diced onions. Cook until onions are browned.
3.Add in cinnamon, turmeric, and advieh spice mix to the onions. Stir until fragrant.
4.Add in saffron and water. Bring to a boil.
5.Drain the rice and add it to the pot. Mix gently.
6.Add in the noodles, raisins, dates, and orange peel. Mix gently.
7.Cover the pot and cook over low heat for about 45 minutes.
8.Add slivered pistachios, almonds, and butter. Mix gently.
9.Cover the pot and cook for another 10 minutes on low heat. Fluff the rice and mix gently before serving.
