Ingredients

3 lbs beef stew meat , cut into 1-2-inch pieces ( I use a chuck roast & cut it up )
8 red chilies , stemmed and coarsely chopped ( you can take out the seeds to reduce the heat level )
1/2 small onion , chopped
2 inches fresh ginger , peeled and chopped
3 garlic cloves , chopped
1 stalk lemongrass , tough outer layers removed , tender insides finely sliced
1/3 cup tamarind paste ( combined with 1/3 cup warm water )
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1/2 teaspoon chili powder ( ground chiles , not the chili pepper spice blend )
1 can light coconut milk
2 teaspoons sugar
salt
Rendang Padang is a classic Indonesian beef curry dish originating from the city of Padang in West Sumatra. Instructions

1.In a blender or food processor, combine the chopped chilies, onion, ginger, garlic, and lemongrass. Pulse until a chunky paste is formed.
2.In a slow cooker, combine the beef stew meat, homemade paste, tamarind water, cumin, coriander, turmeric, and chili powder. Mix well.
3.Add in the coconut milk, sugar, and salt. Stir until everything is combined.
4.Cook the curry on LOW heat for 8-10 hours or on HIGH heat for 4-6 hours.
5.Stir occasionally and add water if the curry is too thick.
6.Serve hot with steamed white rice and garnish with sliced fresh red chilies and fried shallots if desired.

Rendang Padang is a flavorful, well-spiced and hearty dish that is easy to make in a slow cooker.

CONS

This dish can be quite spicy for some people, but this can be adjusted by removing the seeds from the chilies.
Also, the cooking time is quite long, but it is worth the wait for the rich and tender meat.
