Ingredients

6 eggs
1/2 cup plus 1 tbsp sugar
3/4 cup flour
2 tablespoons butter
1/2 cup poundcake , crumbs
1 1/2 ounces cocoa
cinnamon
grated lemon peel
2 3/4 ounces semisweet baking chocolate
1 cup less 2 tbsp sugar
currant jelly
1 3/4 ounces slivered almonds

Its name means 'saddle of venison' in German, as the cake is traditionally shaped like the back of a deer. This rich and decadent cake is made with layers of chocolate cake, currant jelly, and a chocolate buttercream frosting. It is then finished off with a sprinkle of lemon peel, cinnamon, sugar, and almonds for added crunch and flavor.

Instructions

1.Preheat the oven to 375°F (190°C) and grease a 9-inch (23cm) springform pan.
2.In a large bowl, whisk the eggs and 1/2 cup of sugar until pale and fluffy.
3.Sift in the flour and cocoa powder and fold gently until just combined.
4.Pour the batter into the prepared pan and bake for about 12-15 minutes until the cake is set.
5.In the meantime, melt the chocolate and butter in a double boiler over low heat.
6.Once the cake is cool, slice it into two layers and brush the bottom layer with the currant jelly.
7.Spread the chocolate mixture on top of the jelly layer and then place the second layer on top of the chocolate.
8.Brush the top layer with more currant jelly and sprinkle the cake with lemon peel, cinnamon, sugar and almonds. Serve chilled and enjoy!
