1.In a small bowl, mix together the lime juice, 2 tbsp. dark rum, and pineapple juice.
2.Season the pork with kosher salt and black pepper.
3.Heat olive oil in a large skillet over medium-high heat.
4.Add the pork and sauté until browned, about 4-5 minutes per side.
5.Transfer the pork to a plate and set aside.
6.Add 1/4 cup dark rum to the skillet and cook, stirring constantly for about 1 minute. The alcohol will burn off.
7.Add guava jelly and whisk until melted.
8.Return the pork to the skillet and spoon the sauce over the pork.
